Brunch Party Waffles

Everybody likes something a little special on weekends. Some families cook lunch or dinner together, some like to spend a little extra time preparing breakfast. My kids love brunch on weekends or whenever we travel go out for brunch to a restaurant and order half of the menu, lol. So these little waffles are just one of the items we make on weekends. I used to use the same batter as for banana pancakes but after experimenting with flax egg and several trials, the boys decided that this is the best recipe for waffles.

  • 2 cups of flour

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1 flax egg (1 tbs ground flax seeds and 3 tbs water)

  • 1 cup almond milk or other plant milk

  • 2 tsp lemon juice and zest (optional) or ACV (apple cider vinegar)

  • 3 tbs coconut oil

  • pinch of sea salt

  • 3 tbs maple, rice , agave syrup or honey

  • vanilla extract

Sift all dry ingredients into a bowl. In another bowl mix ground flax and water and let it stand for 5, 10 minutes. Then add almond milk, vanilla, sweetener and lemon juice or ACV. Gradually add this mixture to the bowl with dry ingredients. It should have a consistency of a muffin batter, almost. Let it stand for 10 minutes then add oil. Cook the batter in the waffle iron until golden.
