Heartwarming Winter Oats
I think there are just a few people who don’t like oats. The only reason they don’t like it is because they haven’t found the right recipe. Oatmeal is so versatile. There are just soo many ways to prepare oats. Sweet, savory, cooked, raw, soaked, baked…. see where i’m going with it?
The reason I encourage you to try to have oats regularly is because it’s one of the most health promoting foods. The benefits are endless. It helps to lower cholesterol, promotes weight loss, because of high soluble finer content it helps to eliminate waste and toxins from your body. High in protein and rich in micronutrients, such as manganese, selenium, phosphorous, thiamin and magnesium. It wold keep you satiated for hours, too. Do we need more reasons to eat oats? Oh yes!! It has to taste delicious, lol, and thats exactly what I’ve been working on!
1 cup rolled or old fashioned (steel cut oats is my favourite, but takes longer to cook)
1 cup water (you might need more, depending on the type of oats you’re using)
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup mixed nuts or seeds (sunflower, pumpkin, flax seeds)
pinch of salt
1 tbs of preferred sweetener (maple, agave, rice syrup or honey)
1 tbs coconut oil
1 large or 2 small bananas
dark chocolate (optional)
To make your oatmeal creamier add it to cold water, if you like a bit of a chew then bring water to the boil first. Once its boiling add the spices, salt and half of the sweetener. Cook until desired consistency or slightly undercooked, cover it and let it stand while you prepare the bananas.
Melt a tbs of coconut oil in a nonstick frying pan. Slice the banana lengthwise. When oil is hot, but not smoking add the bananas cut side down and let it caramelise. Do the same with the other side.
Now you can add nuts or seeds to your oatmeal, mix well, transfer to two bowls, top it with caramelised bananas and drizzle the rest of the sweetener. If you want to make it extra special, add few pieces of good quality dark chocolate while its still warm. Enjoy!!
