Mushroom Kale Oatmeal
This is one of my favourite breakfasts. The combination of earthy flavours of mushrooms and oats is so comforting in fall and winter. To enhance the benefits of the meal I like to add a pinch of turmeric and some green leafy vegetables. I like to have this as my post workout meal.
As you know turmeric has many health benefits. One of the most important compounds and active ingredient found in turmeric is called curcumin. It is believed that cucumin has natural anti-inflammatory properties, acts as an antioxidant and may decrease the risk of cancer, dementia , cardiovascular disease and other chronic age related diseases. You can now find Curcumin in supplement section in health stores in form of a pill, but i like to add it to my food whenever i can And its really easy, since it doesn’t have much flavour.

1 cup sliced mushrooms
1 cup chopped kale
1/2 cup shallots
1 tbs olive oil
1/4 tsp turmeric
1 cup steel cut or rolled oats
handful of parsley
In a tbs of oil sauté shallots and mushrooms, add turmeric. Cook the oats until almost done. Add shallot mushroom mixture into the oats. Season with salt and pepper, add kale and stir constantly until kale is cooked and the mixture represents a thick creamy porridge. Add parsley right before serving. I sometimes like to add just a drop of truffle oil so it really tastes like a creamy risotto in a fancy Italian restaurant. The size of servings will depend on the type of oats your using, but generally it makes two.
