Delicious Healthy Granola

I was never a big fan of granola and cereals in general. It almost felt like eating a dessert, lol. Until I adapted this recipe from Smitten Kitchen to my taste and then it kind of evolved into this vegan version. Needless to say its totally modifiable and adaptable. And most important, super, super easy.


Ingredients

  • 250gm rolled oats

  • 40gm shredded coconut

  • 40gm coconut flakes

  • 2tbs olive oil

  • 60ml maple, rice, date or agave syrup

  • flax egg (2tbs ground flaxseed + 4-5tbs water, let it stand 5 min)

  • pinch of sea salt

  • 1/2tsp cinnamon

  • orange zest of one whole orange

  • 100gm of walnuts, almond, pecans or any seeds for nut-free option

  • 200gm of raisins, cranberries, cherries or any other dried berries or fruits

Method 

Preheat your oven to 150C. Combine all the dry ingredients in a bowl, except fruit. Whisk the flax egg with sweetener, oil and zest. Add the dry mixture in and combine thoroughly. Spread it on a baking sheet, lined with parchment paper and bake until golden brown and dry to the touch. Cool it completely then add dry fruit and store in an airtight container. It will keep for couple of weeks in the pantry and a lot longer in the freezer.
