This recipe is one of my favorite for savory breakfast. That’s the way I used to eat my eggs and this tofu alternative definitely hits the spot, especially after a good workout! I like to eat it with pita bread and tahini or hummus and a pile of greens.
100g block firm tofu
sea salt, black pepper
spear of green onion
handfull of parsley
1tbs olive oil (optional)
Place the tofu on a nonstick pan, mash it into a crumble with the fork. Turn on the heat, add turmeric, salt, pepper and a spoon of water so the flavors are evenly distributed. Once it’s heated through and water is evaporated add the herbs, mix well and turn off the heat. You don’t want it to be too dry. Add olive oil if using. Serve it along with greens or in pita bread sandwich with some hummus or tahini.
